Dear Friend,
I know from experience that it is not always easy to figure out if your child is suffering from food intolerance symptoms!
Being a mother of three wonderful girls I am truly blessed! Lova, Linn and My give me so much love and joy, and teach me so many lesson's.
However things haven't always been easy in our lives, since all of them had colic as babies. My oldest daughter started sleeping better as she grew older, but not my middle daughter Linn.
I spent countless nights walking around the house with Linn in my arms, with her crying hysterically out of pain and with me sobbing helplessly as well since I couldn't help her.
To see her in so much agony and not being able to help and find out what was wrong made me feel like a terrible mother.
The doctors at our local healthcare center suggested we just wait and see. I was perceived as an overprotective mother and was told Linn had colic and that it would eventually pass. When she grew older and was still waking up 15-40 times a night, the problem according to them was that I hadn't taught her to sleep by herself and I was given brochures about different sleeping techniques. No one seemed to believe me about the terrible pains she suffered from.
Linn had tantrums, an enormous belly and tiny limbs, she was very small for her age, and most importantly her problems increased when she started eating bread and pasta.
However it is one thing to know something and another thing altogether to take action! In real life I had two baby daughters, born only 16 months apart, and I was just trying to make it through the day.
When Linn was one I finally managed to convince the doctor to send us to a specialist, however the food allergy test (IgE) didn't show anything. Was I wrong? Maybe her problems weren't caused by a food intolerance? I was beginning to doubt myself.
When Linn was one and a half she was still waking up 15 times a night. Since I was pregnant with her sister My in the third trimester I felt that in order to survive we needed to fix this right now. So I made one last effort and googled the internet. To my joy I found a nurse in my city who was cooperating with a company in the US providing IgG food allergy tests.
I wanted to check IgG as well as, but this is not always available as an option. After two weeks we received an answer which showed a positive result for milk, egg and also whey, barley and wheat.
Since we didn't have the energy to change her diet completely we removed milk and egg and skipped sandwiches and pasta. Within a month we went from 15-40 wake ups per night to 3-5 wake ups, which we felt was quite endurable.
After six months without any gluten she grew twice as much as she did the whole year before. And her tantrums became fewer and fewer.
She was like a different kid, so much more happy and content with life!
During this time I amassed a lot of information about food allergies and intolerances. I felt that I needed to be well informed in order to help my daughter heal.

Baking Gluten Free Can Be Tricky...
I loved baking! But when I realized my daughter was gluten intolerant I had to relearn everything I knew. My cakes and muffins turned out dry and tasteless, and I started to dread birthday parties. So I searched the internet for ideas.
I had three children under the age of five and I had neither the time nor the energy to search for strange ingredients, and then mix several types of flour. There had to be an easier way.
Unfortunately gluten is what gives baked goods their texture, since gluten enables the dough to rise and bind together. So gluten-free bread and muffins tend to become both heavier and with less flavor.
The trick was to find a way to achieve a moist and light texture using an all purpose gluten-free flour.
After a long process of trial and error I came up with delicious AND Easy recipes that my daughters loved. What's more, my third non-gluten intolerant daughter loved them. And all their friends loved them!
What's more, these same ingredients even made my cakes more nutritious that the standard gluten free variety. This is important since a gluten free diet is often fibre and nutrient deficient.
If you buy a loaf of gluten free bread, or gluten free muffins at the supermarket; take a look at the long list of preservatives and additives.
I didn't want to feed my daughters junk. I wanted my kids to get all the vitamins and protein they needed to stay healthy.
Guess what these common ingredients are? ( I'll let you know further down...)
Anyway after a couple of years of successful gluten free baking I have put together almost 100 recipes I would like to share with you:

Victoria Trygg, mother of a gluten- and dairy intolerant son.I would have needed these books when things were toughest with my son. It would have helped me understand his symptoms sooner. "The EASY Guide to Gluten- and Dairy Intolerance" provides clear information about food allergies, and good tips about how to change your child's diet, which is a challenge for the whole family. The recipes are fun and tasty and can be enjoyed by everyone. Thank you Ann-Marie for sharing your experience. These books will help many families!
Pediatrician U.M.KölfeldtI've been a pediatrician since 2002 and have diagnosed many children with suspected food allergies. But it wasn't until I was on a dairy free diet myself, while I was breast feeding my son, that I realized how much it effects everyday life. Thanks to Ann-Marie's dairy free chocolate cake, my chocolate cravings were satisfied, and I had a great cake to offer visiting friends and family. All these wonderful recipes will make life easier for me and many others. I look forward to offering this treasure of recipes to my gluten- or dairy intolerant patients. Thank you Ann-Marie for making life more delicious!
Linnea Bergman, preschool teacher at Happy Kids Education and Annie's motherIn my job as a preschool teacher I often come in contact with children suffering from food allergies. But it wasn't until my daughter was diagnosed with gluten intolerance that I realized how difficult it is to completely change a child's diet; to keep track of what is OK to eat and what isn't. Before we had a diagnosis, life as a parent was very difficult since we didn't know the cause of her symptoms. And when we received the diagnosis we wanted to help her as quickly as possible, but finding information and fun recipes wasn't easy. These books have been a great help, and it feels good to know that they are written by someone who understands what we are going through and who has been there herself. Thank you for a wonderful book!
Ingela VågsundWhen Ann-Marie said she was creating a book with gluten- and dairy free recipes, I thought it was a good idea, but didn't think it applied to me since I and my family don't suffer from food allergies. But then I tried several of the cakes and they taste heavenly! These will be my favorite recipes and the ones I use when kids come to visit - and not just kids with food allergies!
Family NAt my daughters school her name is on a long list of names of children who have a food allergy. Birthday parties are always a challenge to find recipes that are suitable for all. This cookbook is fantastic - gone are the days of needing to make three cakes for one party. My family have tried several of the recipes and loved them. My husband was surprised when I told him that it was not a 'regular' cake he was eating - pleasantly surprised. The blueberry muffins were amongst my favorites, light and fluffy with a delicious topping - hard to stop at one! The date cake was moist and winner for both the kids and adults - served warm with lactose free ice-cream it makes for a wonderful winter dessert. Thanks Ann-Marie for putting together your knowledge and experience and sharing it with us!!
When my daughter Linn was suffering from food intolerance symptoms I spent so much time scouring the internet for information that could help me understand the root of the problem. It took a while to piece together the relevant information, and then figure out which tests I could do at home.
Now I would like to offer this material to you. Here is everything you need to know about food intolerances and allergies, including information your doctor might not know.

There really could be a simple solution! I cannot believe how chaotic our life used to be. Today I am so grateful that Linn is just an ordinary girl; pain free, happy and fully content with life. I just wish I had known then what I know now so that my wonderful daughter could have avoided all the unnecessary pain.

P.S. Scouring the internet for information on gluten and dairy intolerance takes time. Trying out recipes that don't taste as good as they sound takes time. Searching for unusual ingredients takes time. If you have children I know you don't have time. This is your shortcut.
P.P.S. Remember the "secret" ingredients I found in my pantry that magically made my gluten free bread and muffins tasty and light in texture? They are ground nuts, shredded vegetables and fruit, and mashed bananas. Yum.
